Desi cow ghee made through the traditional bilona process is fundamentally different from commercial ghee. The bilona method involves culturing the milk into curd, hand-churning it into butter, and then slowly clarifying that butter into ghee. This process retains butyric acid, CLA (conjugated linoleic acid), and a full spectrum of fat-soluble vitamins.
Commercial ghee is typically produced by direct cream method — boiling cream and skimming fat. It is faster and cheaper, but nutritionally inferior.
